Head to the harbour to check out The Premise, a floating pop-up bar with an apothecary (think glass vials, medicine drawers and mortars and pestles) theme. It's a five-minute water taxi ride from the Man O' War Steps, which is on the Botanic Gardens side of the Opera House (Thursdays, Fridays and Saturdays until October 22, water taxis will be free, see facebook.com/thepremise).

The Premise was created by Drambuie as part of a competition. The public was asked to submit an idea for a bar and the winners were Matilda Swan and Simon Connett, who wanted a bar like an olde worlde pharmaceutical dispensary - albeit one with a harbour view. Dan Kaufman
